Last month we had the pleasure of tasting some of THE best wedding cakes we've ever had...they were simply divine! Not only was the cake amazing, but so is the cake designer behind all of the ingredients at K. Rose Cakes.
Kristine Bender is the mastermind and culinary talent behind her DC based cake design business, K. Rose Cakes! She is SO nice and was kind enough to show us some of her latest work and give some very helpful wedding cake tips...
{rb} Tell us a little bit about how you got started as a cake baker?
KB: After graduating from college with a degree in English, I decided on a whim to take a job in a pastry kitchen. I quickly fell in love with pastry and baking and became determined to pursue a culinary career. Soon after, I became the executive pastry chef at Todd English’s Olives and most recently at Citronelle in Georgetown. While working as a pastry chef I tested and developed numerous cake recipes currently on my menu. I taught myself how to create sugar flowers from observing, reading books, and using real flowers as models for my sugar paste blooms.
{rb} If you were giving advice to couples planning for their wedding cake, what piece of advice would you give them as important things to consider?
KB: I would advise couples to consider the taste of the cake equally with the looks. Try cakes with several bakers until you find one that you love and you know your guests will want to eat! After taste, I would say it is important to also find a baker that can capture your unique style in a wedding cake. Finding someone who understands the aesthetic of your wedding day will help to make the cake a beautiful visual at your wedding reception.
{rb} What are some of your favorite cake trends?
KB: I love the idea of incorporating non-edible accessories into the design of a wedding cake, such as real ribbons, paper, or a unique cake topper. I think it’s nice to have a cake keepsake after its all been eaten. I also love cakes on vintage cake stands and using lettering on the cake such as in the form of a monogram or part of the vows or an old love poem. I’m also really into a dessert display full of round stands of miniature cakes and pastries, and pastel confections in pretty glass jars.
{rb} What is your favorite thing about being a cake "designer"?
KB: The best part about being a cake designer is meeting with brides and designing their wedding cakes with them. It’s always so interesting and refreshing to me how people have such different tastes and styles and I truly enjoy creating cake designs to complement a bride’s style. Cake making is a labor of love, with the sweetest part at the end, when a bride comes back to tell you her cake was beautiful and delicious!
